Chinese-Style Tomato Egg

Chinese-Style Tomato Egg

Simple yet flavorful and comforting, this Chinese-Style tomato egg can be made in under 10 minutes! Enjoy with a bowl of rice -- I love pairing it with jasmine rice!

Ingredients

  • 4 eggs, beaten
  • 3 roma tomatoes, cut in half on the long side, each half quartered
  • 2 scallions
  • 1/4 cup water
  • 2 tbsp oil
  • 1/2 tsp garlic salt
  • 1/2 tsp of sesame oil

Instructions

  1. Add oil to a large pan over medium heat. Add the quartered roma tomatoes and water. Toss and cover to cook for 4-5 minutes until tomatoes are soft. You can cook for less time if you prefer a firmer texture.
  2. Evenly pour the beaten eggs over the sautéed tomatoes. Allow the egg to set for 30 seconds.
  3. With your spatula, carefully scrape the tomato egg from the outer edges to the center. I try to not break the eggs ribbons too much.
  4. Add in the scallions and sesame oil, and stir until just combined.
  5. Enjoy!
