Chinese-Style Tomato Egg
Simple yet flavorful and comforting, this Chinese-Style tomato egg can be made in under 10 minutes! Enjoy with a bowl of rice -- I love pairing it with jasmine rice!

Ingredients
- 4 eggs, beaten
- 3 roma tomatoes, cut in half on the long side, each half quartered
- 2 scallions
- 1/4 cup water
- 2 tbsp oil
- 1/2 tsp garlic salt
- 1/2 tsp of sesame oil
Instructions
- Add oil to a large pan over medium heat. Add the quartered roma tomatoes and water. Toss and cover to cook for 4-5 minutes until tomatoes are soft. You can cook for less time if you prefer a firmer texture.
- Evenly pour the beaten eggs over the sautéed tomatoes. Allow the egg to set for 30 seconds.
- With your spatula, carefully scrape the tomato egg from the outer edges to the center. I try to not break the eggs ribbons too much.
- Add in the scallions and sesame oil, and stir until just combined.
- Enjoy!
