Shrimp Toast
These shrimp toasts are super addictive and so easy to put together!This recipe works in the air fryer but they have a different taste and texture.

Ingredients
- 3.5 oz shrimp, peeled and deveined
- 2 egg whites
- 2 tbsp cornstarch
- 1/2 tsp sugar
- pince of salt
- 2 tbsp finely chopped fresh cilantro
- 2 slices day-old white bread
- vegetable, canola, or peanut oil for frying
Instructions
- Chop the shrimp into a fine mince
- Mix the shrimp with one of the egg whites and 1 tbsp of cornstarch.
- Add sugar and salt and stir in the cilantro
- Mix remaining egg white with the remaining cornstarch
- Remove the crusts from the bread and cut each slice into 8 triangles
- Brush the top of each piece with egg white/cornstarch mixture
- Add 1 tsp of shrimp mixture on top of each piece of bread
- Smooth out the tops.
- Pour some oil to coat the bottom of your pan and bring to 350 F
- Fry the toasts shrimp side down for 2 minutes. Fry for another 1-2 minutes until golden brown and cooked through
