Luscious Lemon Bars (Gluten Free, Sugar Free)
I was playing with ingredients I had at home and was able to make a delicious lemon bar with GF nut flour and Monkfruit sweetener as a sugar substitute. It came out delicious! Perfect for refreshing and bright snack.

Ingredients
- 2 cups Nut Flour (sub all-purpose flour)
- 1 cup unsalted butter
- 1/2 cup Monkfruit powdered sugar plus additional for dusting (sub sugar)
- 1 tbsp lemon zest
- 1/4 tsp salt
- 1 cup Monkfruit baking sweetener (sub sugar)
- 3 eggs
- 1/3 cup lemon juice
Instructions
- Preheat oven to 350 °F. Grease a 13x9” baking pan.
- Add flour, butter, powdered sugar, lemon zest, and salt in a food processor and process until mixture forms coarse crumbs.
- Transfer mixture to baking pan and press evenly. Bake at 350 °F for 20 minutes or until golden brown.
- To your stand mixer, add sugar, eggs, lemon juice, and lemon zest and beat at medium speed until well combined.
- Once crust is out of the even allow to cool slightly. Pour lemon mixture evenly over warm crust and return to oven for an additional 20 minutes.
- Remove pan to wire rack and cool completely.
- Dust with additional powdered sugar and cut into bars.
- Enjoy same day, do not refrigerate.
