Extra Chunky Peanut Butter Cookies

Okay, yep. These cookies are everything 😋 Cookie number 5, Extra Chunks Peanut Butter Cookies Welcome to my cookie journey. Long story short, when I was young, my mom got me a cookie cookbook and I told myself I’d make every single one of them when I finally had my own kitchen. In the Summer of 2020, I finally got my own kitchen. Join along as I review these cookie recipes and occasionally add in my own adjustments!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup crunchy peanut butter
  • ¾ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup (1 stick) butter, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cups chopped chocolate-covered peanut butter cups (12 to 14 candies)
  • 1 cup dry roasted peanuts

Instructions

  1. Preheat oven to 350°F. Line cookie sheets with parchment paper or lightly grease.
  2. Combine flour, baking soda and salt in medium bowl.
  3. Beat peanut butter, granulated sugar, brown sugar and butter in large bowl with electric mixer until creamy.
  4. Beat in eggs and vanilla.
  5. Add flour mixture; beat until well blended. Stir in chopped candy and peanuts.
  6. Drop dough by tablespoonfuls 2 inches apart on prepared cookie sheets.
  7. Bake about 13 minutes or until set. Cool on cookie sheets 1 minute. Remove to wire racks; cool completely. Makes about 4 dozen cookies.
