Recreating Disneyland Foods: Ronto-less Garden Wrap

Ingredients
Pickled Cucumbers (this will give you more than you need for the recipe)
- 2 cups Persian cucumbers (~6 cucumbers), cut to 1/8" thickness
- 1 cup water
- 1/2 cup white vinegar
- 2 tbsp sugar (or sweetener of your choice, e.g., Monkfruit Sweetener)
- 2 tsp salt
Slaw
- 1 cup kimchi
- 2 tablespoons finely shredded purple cabbage
- 2 tablespoons grated carrot
- 2 tablespoons thin red bell pepper strips
- 2 tablespoons finely shredded napa cabbage
- 1 tablespoon freshly chopped cilantro
Gochujang Mayo
- 1/3 cup kewpie mayonnaise
- 1 heaping tablespoon gochujang paste
- 1 tablespoon kimchi juice
- 1 tsp sugar (or sweetener of your choice, e.g., Monkfruit Sweetener)
Meat Patties
- 16 oz. ground beef
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp chili oil
Optional alternative meat patty seasoning (use this if you want it to taste more like bulgogi!)
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp sesame oil
- 1 tsp garlic powder
You will also need
- 4 pieces of gyro or pita bread
- Black sesame seeds
- White sesame seeds
- Nori furikake
Instructions
Prepare the Pickled Cucumbers
- Place the thinly sliced cucumbers in a bowl.
- In a small saucepan, combine sugar, vinegar, and salt.
- Heat over medium, stirring occasionally, until the sugar dissolves.
- Once cooled, pour the vinegar mixture over the cucumber slices. Chill in the refrigerator until needed.
Create the Kimchi Slaw
- In a bowl, mix the kimchi with the chopped cilantro, shredded purple cabbage, grated carrot, red pepper strips, and shredded napa cabbage. Chill in the refrigerator.
Mix the Gochujang Mayo:
- Combine the mayonnaise with the gochujang paste, kimchi juice, and sugar. Mix well. Keep refrigerated until assembly.
Cook the Meat Patties
- Season the ground beef with salt, pepper, and chili oil.
- Form the seasoned meat into 4 rectangular patties, each about 7"x1.5".
- Fry the patties in a bit of oil until they're browned and cooked through.
Assemble the Wraps
- Lightly warm the gyro or pita bread on the stove.
- Spread the gochujang mayo over the bread.
- Place a meat patty on top of the sauce.
- Add a layer of kimchi slaw.
- Top with sweet pickled cucumbers.
- Garnish with sesame seeds and nori furikake.
